Delicious Chicken, Potatoes and Green Beans

We just had this for dinner tonight and let me tell you, it was AMAZING! I loved it! I’m not the biggest fan of green beans, I’ll eat them every now and then, but these green beans had me going back for seconds!

This is a very simple dish to make, and takes almost no effort to get it into the oven.

Ingredients:

Chicken cutlets/breasts

3 potatoes

1 can of green beans, or 1 1/2 cups of frozen green beans

Italian dressing seasoning

Ranch Dressing seasoning

1 tbsp butter

Olive oil

1/2 cup chicken stock

 

What to do:

1) Pre-heat oven to 390 degrees

2) Mix packets of ranch and Italian dressing in a small bowl

3) Peel/cut potatoes into small pieces. Place them in your baking dish (I used a glass 9X13), drizzle with olive oil and sprinkle a bit of your Italian/ranch dressing seasoning on them. Coat potatoes well, then arrange on one side of the baking dish, or around the baking dish leaving the center free

4) Place chicken in the baking dish. Lightly sprinkle some of the dressing seasonings on them.

5) Place your green beans on the side. Lightly sprinkle with remaining dressing seasonings making sure everything is coated

6) Place tbsp of butter on top of chicken (this will melt during cook time and make it so soft!)

7) Pour in the 1/2 cup of chicken stock

8) Cover with aluminum foil, and place in the oven for 40 minutes

9) Uncover dish and place back in oven for 10 more minutes

10) ENJOY!

See how fabulous and easy this is?! It tasted so amazing. Unfortunately I did not snap any action shots, but I do have a shot of my plate right as I sat down to eat (and yes, I do love me some potatoes haha):

Epic Iced Coffee Drink!

This is the best coffee drink I’ve ever had! It’s better than my usual Starbucks coffee!

Ingredients:

Instant Coffee

Chocolate flavoring (can be found in the coffee aisle at WalMart)

Chocolate syrup

Coffee creamer (liquid, any flavor of your choosing)

Milk

Ice

Directions:

Begin by putting ice in the bottom of the blender. Pour in milk (milk is based on how many people this is for). Add coffee creamer, a squeeze of chocolate syrup, 2 spoonfuls of chocolate flavoring, 2.5 spoonfuls of instant coffee. Blend it all together until smooth. Pour into your glass, top off with whipped cream and a drizzle of chocolate syrup and enjoy!

Chicken/Pork Lo Mein

I found this recipe in a book called Taste of Home Guilt Free Cooking. This book has low calorie and Diabetic friendly recipes (this goes along with our aim to eat healthier!) and we decided to try it out! I have made a few modifications (as in what we added a few additional ingredients) however it is still healthy!

Ingredients:
Pork tenderloin (OR chicken)
1/4 cup reduced sodium soy sauce
3 garlic cloves minced (or replace with garlic salt)
1/4 teaspoon crushed red pepper flakes
2 cups of frozen peas (and any other veggies you want, such as baby corn, carrots, etc)
thin spaghetti
1/3 cup chicken broth
stir fry sauce

Cut tenderloin (or chicken) into small squares. Put into a ziplock back with soy sauce, garlic (or garlic salt) and red pepper flakes. Let this marinate in the fridge for 20 minutes

While meat is marinating, boil thin spaghetti noodles until cooked.

Take out pork (or chicken). Add to a non-stick pan that has been sprayed with cooking spray and add stir fry sauce.
Cook meat until done.
Add peas (and other veggies), cook until these are cooked
Add noodles and chicken broth
Cook until liquid is gone

Serve and enjoy!

I made this last night and used chicken. For the veggies we had peas and baby corn (we found a can of it in the Asian food aisle at Walmart). It was absolutely delicious! Here is a picture, (not the best mind you) but a picture nonetheless :)

Homemade Enchiladas and Rice

I figure it’s time to share a recipe on here! This is one of my favorites :) It’s a recipe passed down to me from my dear mom. It’s one of the family favorites and I make it at least once a month!

For the chicken enchiladas:

Boil chicken with tomato, onion, garlic salt, salt, black pepper, oregano, garlic, and some cumin. When chicken is done, shred or cube chicken. **Sometimes I put my chicken in the Crockpot for some of the day. Just put in your chicken, water, and all the spices, cook on low for at least 4-6 hours. Chicken shreds so easily!

Make enchilada sauce. I take one large can of enchilada sauce mild (Las Palmas or another brand, usually in a yellow can from the Mexican section of your grocery store), one can of tomato sauce. if you need more enchilada sauce add another can of enchilada sauce. Add garlic salt and black pepper to taste. If you want your enchiladas to be on the spicier side, add a small can of El Pato sauce.

Take regular white corn tortillas (small size) and fry slightly in olive oil. Tortilla should be flipped once and in the pan for maybe a minute. Just until it bubbles. Make enough tortillas for how many enchiladas you want.

Make an assembly line. Pour some of the enchilada sauce into the pan you’re using to bake the enchiladas. Take your tortilla, dip it into the enchilada sauce you made, then put it in the pan. Put chicken in the center of the enchilada then wrap and leave in pan. Continue to do this until you have as many enchiladas as you want in the pan. It is ok to double layer.

When done wrapping enchiladas pour the rest of the sauce (or how much you want on there) on the enchiladas. Then add a layer of cheese on top (I use four cheese shredded cheese blend).

Preheat oven to 375 degrees, and bake enchiladas in for 40 minutes.

When done, garnish with lettuce or cabbage, pico de gallo, sour cream and whatever else you’d like!

Orange rice:
Saute rice and onion in olive oil in pan until rice is slightly brown.

Add either chicken stock or water and one can of tomato sauce.Stir together.

Add chicken bouillon to taste and garlic salt, black pepper. cook rice until tender, add more water and chicken bouillon if needed.

***When the rice is done, I sometimes add sour cream to my portion on my plate! It makes it taste amazing!
